when people ask me if I like to cook, the answer is always yes! but am I good at it? hmmm. that's a different story. the thing is, I never follow a recipe exactly as it's written...I always have to add something, skip the ingredient I don't care for/didn't care to find, etc. but, I have some staples that are easy to make and that I can't get enough of:

roasted veggies - my sunday night ritual. usually some combination of kale, mushrooms, grape tomatoes and broccoli + olive oil, chili flakes, salt & pepper. make a big batch, then add to rice pilaf + protein for an easy work lunch. you cannot mess this up.

jalapenos in everything. my roommate thinks that I'm a crazy person, because she is scared of all things spicy. a couple of weeks ago I made jalapeno-infused simple syrup, and it was kind of life changing. a tiny bit of that + tequila + club soda? perfect for summer.

roasted salsa - again, the oven does the work for you. whatever peppers look yummy to you + big slices of onion and tomato, and spices. the trick is to nestle the garlic in the tomatoes, so the cloves don't burn while roasting. cool, blend, throw on anything.

and my newest trick...tomatillo salsa! I had no idea how easy it is to make this -- fresh tomatillos + cilantro, lime, jalapeno and a little bit of salt. you can also add white onion and garlic or whatever else you prefer.
lastly, I really need a grill. but ideally one that comes with a boy who knows how to use it. until then, I will continue to overcook meat and consult numerous google recipe search results.
